soup


I have been making a lot of soup lately. Three out of four of the kids like soup, and no. three will eat it.

I saw a recipe for a carrot soup on Rasing Foodies and thought I would give it a try using all of our carrots from the farm. I have been making my own stocks lately, so I used that as well. I changed her recipe a bit, but I have a new hit on my hands. No. three LOVED it. It really came out great. I served it with a dollop of sour cream and sprinkled with bacon and good crusty bread, perfect on a cold fall night.

CARROT SOUP
1/2 pound of bacon, diced
1/4 stick unsalted butter
2 onions, sliced
3 sprig thyme
2 pounds organic carrots, peeled and sliced
6 cups chicken stock

In a large stock pot cook the bacon until crisp. Remove bacon with a slotted spoon and reserve for serving. Drain bacon fat leaving about three tablespoons in the pot.

Add butter to the pot and melt the butter over medium-low heat. When butter has melted add the onion and thyme. Continue cooking on medium-low heat for 10 minutes, stirring occasionally. Be sure to scrap up all of the brown bits from the bacon.

Add the carrots and cook for 5 minutes, stirring occasionally.

Pour in the stock and turn the heat to high. Bring to a boil and then reduce the heat, add the salt, and simmer for 30-45 minutes.

Puree the soup in a blender or food processor or a stick blender (if you do not have one, you should invest in one, they are great) and return to pot. You may need to do this in several batches and be careful, as hot liquids will expand in the blender.

Heat until warmed through.

Serve topped with sour cream and bacon.

work


Feeling defeated by no sales for a long time I all but stopped making cards. I made some for moms to give as favors for our end of summer party, I made some for my sisters-in-law and brought them to the beach for coming to see you presents, and I made some for the teachers as back to school gifts for the kids to give. I gave up on etsy, I think I spent more to list stuff then I made.

A friend was over the other day to pick up something and wound up buying eight or nine packs of cards, Feeling a bit inspired, I thought I would give it another go, perhaps things have picked.

I will be updating the shop as much as I can over the next few weeks.

detox recap


The detox was a success. I was kinda sad that we stopped, but it is not easy to eat that way all the time. I was feeling so much better. I had lots more energy, I no longer was getting tired during the day, or waking up feeling like I needed a nap.

The first two days were the worst and the first weekend was hard, but besides that you get used to it. It was a bit of a challenge to come up with meals and everyone was sick to death of beans. I think the next time I do it I will see if there are some cookbooks (I am sure that there are, there seems to be a cookbook for everything) and perhaps that will help add a bit more variety.

csa update


I had a few spare minutes so I went back and posted all the csa shares that I missed. I am now caught up and will have the next post of what we get this week. I hope that I can stay up to date with it. I have not had time to post much or read many blogs. I was getting a bit bored of posting, feeling like I was running out of things to say, but perhaps I'll just do a few posts of the perfect series along with snapshots.

It is hard to believe, but it was thirteen years ago today that I got married. Time flies!

I took no. four into NYC for a lunch date with my husband, a fast trip since we needed to be back for the bus, but lots of fun.

really?


I am very behind on posting. My life has been hijacked by four kids. I cease to exist for my own purpose.

I will go back and post the detox recap and our csa shares.

However, I had to post about what I am very depressed about. My husband just called and told me the sad news. The end of print is happening. I never believed that it would really happen but Gourmet Magazine has folded. I started my subscription to Gourmet back in 1995. I am so sad, I loved Gourmet.

Also, Cookie Magazine is no longer. That makes my magazine count down by four. I already lost Domino and Wondertime.

What is next?
